13 Januar January 13, 2007I want to start off today by saying how much this website is helping me stick to my new lifestyle changes. Realistically I know that there are only going to be one or two people (including Nicky) who will read this blog, but something in my mind still wants to think that there are thousands logging on. Every time I start to eat something I shouldn't, I think about what all those people are going to think. Rediculous I know, but it helps me stay accountable!
Anyway, here's how I did today.
Breakfast--Egg whites, whole wheat bagel, coffee (by the way my coffee is with non-fat creamer & sweet n low)
Lunch--Turkey breast on toasted white-wheat bread, banana, and low-fat pretzels
Dinner--"fake fried fish", baked hush puppies
Snacks--100 calorie swiss roll, banana, 5 dark chocolate hersheys kisses
*And by the way, I think it's AWFUL of the people who put out the 100 calorie swiss rolls to package them in twin packs when they are 100 calories EACH--very wrong!* Fake Fried FishFake Fried FishThis recipe is for baked fish that tastes just like fried fish (just noticeably less greasy and much better for you!).
*fish fillets (catfish, bass, whatever you have) *2 cups yellow corn meal *1/2 cup vegetable oil *salt to taste *Cavenders seasoning to taste
This recipe is really simple. Preheat your oven to 400 degrees. Mix corn meal, salt, & Cavenders in a bowl. Take each fish fillet and dip it in the oil. Let excess oil drip off (I even like to rub as much off as possible with my fingers). Dip fillet into the dry batter mix. Cover thoroughly. Shake off excess batter and lay pieces on a non-stick cookie sheet. Bake 20-25 minutes (depending on thickness of fish fillets). 12 Januar Week 1 Weigh InI was so excited about today's weigh-in--I lost 6 pounds! I know that when you first start a diet and exercise routine you lose more weight faster initially, but it was still so exciting to see it on the scale. One thing that's motivating me is knowing that I could do even better next week--exercise a little more, cut out a few more of those bad food choices. I feel like I've made a good start, and I can't wait to continue!
Goals for Week 2
Weight loss--3 pounds, down to 183
Exercise--Do cardio at least 4 days (walking/jogging, tennis, trampoline)
Food--Watch serving sizes more closely
January 11, 2008Well I did soso today. I usually don't do so well when my husband is home. . and he is off this weekend. . SOOOOOO. . I went for a short walk by myself(1/2mile) then last night jill and i went to the tennis courts and played for a lil bit. . Then we did some jogging up and down the tennis court. . I only made it there and back before i thought my lungs were going to blow up. So i guess my goal for this week is to be able to do it there and back twice. I had a cereal for breakfast. . then a whopper jr from burger king, and homemade chicken pot pie for supper. Today was weigh in and I am frustrated because i didn't lose any. I am kinda bumed but i guess I will just have to tryharder this time. Week 1 weigh inWell today is weigh in time and I am so frustrated. I didn't lose any weight. . not even one single pound. . Sigh. . well i guess i will try some more this week. . But this is not easy hopefully when i get jill's exercise video it will help some. . Well good luck all. . But sorry no results. . :)
My exercise goal is to be able to jog up and down the tennis court 2 times before the next weigh in and to be able to do 20 sit ups ( i am at 10 now). I would also like to be able to do my excerise machine for at least 7 mins, and my mini trampoline for 5 min.
My food goal is to be able to only have one dr.pepper a day. (It sounds easy but trust me it is not. . for me anyways) and to make sure that i am eating small meals throughout the day. 11 Januar Day 7Today was a better day than yesterday. The baby was still sick *stomach bug* so I was at home with my kiddos again. I feel like I ate better though, plus Nicky & I got to go play tennis tonight, which was so much fun. My 4-year-old came with us and rode his bike around the court, so he got to get some exercise, too! I am a little worried about tomorrow. We're having my son's birthday party and I know I'm going to be so tempted by cake and ice cream. I bought some 100 calorie swiss rolls and some pretzels for myself, so hopefully I'll be able to keep my priorities straight. Wish me luck! See you tomorrow for WEIGH-IN!

Dinner--Grilled chicken salad w/ fat free dressing
Snacks--Banana, a few of the short chunky Tootsie Rolls
Exercise--Tennis with Nicky (plus we jogged from one end of the court to the other and back which was painful but hilarious) Salsa ChickenSalsa Chicken
This recipe is very good and very simple!
You will need:
1 pckg chicken breast
1 jar of your favorite salsa or rotel
1/2 cup lowfat shredded cheese (optional)
Line a baking dish with foil (much easier cleanup) and preheat your oven to 375. Spoon a layer of salsa into the bottom of the pan then add chicken. Do NOT puncture chicken--this lets out the juices during cooking! Cover the chicken liberally with salsa. Bake for 45 minutes, then turn chicken adding a few spoonfuls of fresh salsa to the top. Bake another 45 minutes. You can serve with or without additional salsa & low-fat shredded cheese. Enjoy! 10 Januar Day 6I didn't do so well today. My baby was sick so we stayed home from school. During the summer I did GREAT about eating healthy foods and proportions. But for some reason today I was just so hungry, and I couldn't stop myself. Granted, I didn't eat nearly as poorly as I was before we started this competition, but I still disappointed myself. Anyway, hopefully tomorrow will be better. No, not hopefully. Tomorrow WILL be better. Nicky & I are supposed to walk after I get off if the baby isn't still sick.

Jan. 10 2008Well I think i did better than i have since we have started. I had egg whites and a piece of toast for breakfast, a lean pocket and a glass of fat free milk for lunch, some veggies for snack. . and I think i am going to have a sloppy joe. . well half of one for supper. I didn't get alot of exercise in for today but i am going to do some before bed. I just don't understand I am not eating alot but yet No weight loss. . It is driving me nuts. I just really wanna see some results it is so frustrating. Tomorrow is weigh in day and i am going to be so mad at the results. . I start school wednesday and that is when it is really going to get hard. It is just so simple to run to taco bell or pizze Inn instad of cooking when i need to study but i have to figure something out. . Well until next time. . Good luck to everyone else. .
. . . . Biggest Loser. .I can't believe that they didn't lose that much weight. . Usually they are still dropping big numbers. . and i also thought that they should have gave the phone cards to the ones that finished the competition. . They was kinda messed up to me. . The Blue team deserved it. . ! But anyways i just had to vent a lil bit. . I am better now. . 09 Januar Day 5Today was another busy day! I did pretty well food wise, but I'll only have a chance to do PIlates again today. Our satellite was messed up last night so I didn't get to see the show (but thank you Nicky for DVR'ing it for me!). Tomorrow we start our Biggest Loser contest at my work--I'm so pumped! I think that will give me even more motivation that this site has!

Lunch--Weight Watchers lunch (chicken parmesan)
Snack--Small order of popcorn chicken from Sonic (I ate half and saved the other half for later, that's better than all at once, right?

Exercise--Pilates Day 4It was so rainy outside today. . Today was not the best day i have had. I had a big dr pepper which i know that i shouldn't have had but it is just so hard. . .Food wise i did ok. I wasn't able to get out and go walking but i did do my excerise machine. . Lets just say i have a lot to catch up on tomorrow. I just hope that when i start school i am able to resist getting my usual dr.pepper at break time. Gosh i wish that i liked diet things. I went to walmart last night to get some healthy things to eat. I got some slim fast, slim fast snack bars, some veggies, egg whites(Yes jill i decided to try them:) ) For some reason yesterday it was just a gloomy day. . Nothing seemed to happen right . . . But any ways hopefully day 5 will be better.
Happy Birthday Jeremiah:) 08 Januar Day 4Today was a very hectic day. It was our second day back in school after the Christmas break, plus it's my son's birthday so I was busy buying cupcakes (didn't have any, thank you very much!) and getting ready for Saturday's party. I didn't have a chance to do any major exercise but I will do some pilates exercises before bed. Food-wise I did pretty good, and I didn't have any hard-to-handle food tempations. Exercise--Pilates 07 Januar Day 3Day 3 was my easiest day so far. I didn't have much temptation to deal with (except at snack-time in my preschool class), and I had some fun exercising. Nicky and I went walking about 3 miles. I pushed my 4-year-old and my 1-year-old in the double stroller which definitely added some burn! I also feel motivated today because my school is getting ready to start a Biggest Loser contest and that's all anyone's talking about. Had a great day, hope everyone else did too!

Lunch--Weight Watchers microwave dinner--Saulsbury steak & mac n cheese, which was actually really good

Exercise--Walked with Nicky appx 3 miles Day 3Ok today i actually went to a fast food resturtant which was probaly not the best idea but it sure sounded good at the time. We went to mcdonalds and i had 6 chicken mcnuggets and a few friench fries. . boy it was sooooo good. . .but soooo bad lol. . Me and Jill went walking tonight we started out doing our now usual mile and jill decided to surprise me and see if i wanted to walk around the college. . So we did. . about 3 miles. . and it was actually not that bad. . .now that i am home my legs hurt a lil bit but not near as bad as i thought. This exercise thing is so much easier with a friend. . by this summer we might actually be in a two piece without shorts and t-shirts. lol. . .hey anything is possible. Well I guess that is about it for today. . . Day 2Today seemed to go on forever. I did pretty good with my eating. I had a lil late night snack but i have taught myself that when i eat I dont always have to fill up my plate just to have a little bit at a time. At first that was hard because when fixing my plate i was used to filling it up and then eating everything it. Since i have been eating smaller portions i have lost some weight. Tonight jill and I went walking. We walked for a mile and it felt so good. It was kind of a funny experience. We had 4 kids with us. . so it was quite interesting but it was refreashing. We did a lil sprint and it really showed me how out of shape i really am. Well that is about it. until next time. . . 06 Januar Day 2Today I did pretty well, except for lunch. I had a good breakfast, good dinner. But my family and I went out to eat after church and I couldn't resist the temptation to order my regular at our favorite Mexican restaurant--chicken fajita nachos (tortilla chips, grilled chicken, & queso). I felt guilty (especially when I told Nicky!), but like I said, I did good at breakfast and dinner. Fortunately I go back to work tomorrow so that eating out temptation won't be there. Hopefully I'll be able to make better food choices during the week and by next weekend I will have some momentum.

Exercise--Walked a mile with Nicky (with a short burst of sprinting that left us both hysterically out of breath!)
Good luck everybody! Day 1Ok so day 1 actually went ok. I mean it is never easy try and lose weight but it is getting a little bit easier than it used to be. I guess it is because i have figured out that i am fat and I don't like it . lol. At the end of the day I stayed under 1200 calories. I really wish that I could find some healthy recipies that I actually like. It seems like everthing that is low fat or fat free I don't like. I am trying to quit drinking dr.pepper but it is so hard. I guess that is my BIGGEST weakness. I went walking with the kids which was not as easy as I thought it would be. Trying to push a stroller and the other kid wanting to hold your hand while walking up a huge hill completely out of breath was very difficult. But I felt so much better after i was done. I also jumped on my mini trampoline, did some leg exercises and started working on my sit ups. so far i was only able to do 10 (sad i know) but I will get better. I was proud of myself i drank alot of water yesterday and i didn't eat anything after 6 which was so hard. oh wait yes i did i ate a grapefruit but i don't think that will hurt. Well i guess that is it until tomorrow. 05 Januar Day 1The first day was actually harder than I expected. I did great until my family & I were coming home from a mini-trip. My husband said that he was going to stop at a fast food place, and I was SO tempted to get something fattening even though I'd had a salad for dinner a few hours earlier

Exercise--Jumped on the trampoline in 3 minute intervals (which is harder than it sounds, especially for a chunky girl!)
